Making Perfect Easter Eggs, Step by Step:

I) Hard Boiling the Eggs

Getting the eggs to look as lovely on the inside as on the outside is one of the hardest parts of making Easter Eggs. Usually the egg yolks take on a strange greenish hue, and don't look appetizing. Following some easy steps and anyone can make the perfect hard boiled egg.

  1. Purchase the eggs at least a week before boiling. This makes them easier to peel when boiled.
  2. Fill a large pan with warm water. Add the eggs.
  3. Heat over high heat until the water comes to a hard boil.
  4. Turn off the heat, cover the pan with a lid, and leave sit for 20 minutes.
  5. After 20 minutes, place pan in sink and run cold water into pan, replacing the boiled water with cold.
  6. Peel or color as desired.

When eggs are boiled following these steps, the yolks will have a golden yellow color. The eggs make appetizing salads or have eye appeal when just eaten.

II) Coloring the Eggs

There are three options when coloring Easter eggs. The easiest is to simply buy one of the many egg coloring kits available in stores. The kits come with everything needed to make beautiful Easter Eggs.

Another option is using food color. Drops of food color can be added to cups of water to achieve the desired color. Ten to tweleve drops is the amount for coloring eggs. More drops can be added to make darker colors. Colors of food coloring can be mixed to make more colors.

The third option uses food to create the colors for dying. Purple or yellow onion skins can be boiled in water to make purple or yellow dye. Red cabbage can be boiled to make a bluish purple color. Red onion skins will make a yellow green color when boiled. Berries such as strawberries or raspberries can be boiled to make red or pink. Vinegar must be added to the colors to help set them.

III) What to do with the Eggs after Easter

Once the eggs have been hidden and found and Easter is over, a use must be found for all these eggs. They make a good breakfast when peeled and sprinkled with a little salt and pepper.

Another use would be to make egg salad to eat on sandwiches or crackers. Peel the eggs. Chop them into fine pieces. Mix with half mayonnaise and half salad dressing until a good spreadable consistency is created. Chopped green olives or pickles can be added if desired. Enjoy.
