A great spring dessert without flour

Passover is also the Festival of Spring so why not a dessert that combines pears with strawberries.

Passover desserts are always a challenge but here’s one that’s simple and easy. Pears are good all through winter and still in season by early spring, strawberries may be in season depending on where you live. This is a great dessert all year around.

To complete the Passover Meal here is a light simple fruit dessert.

  • 1 cup sugar
  • 2/3 cup orange juice or the juice of one small orange
  • 1 tablespoon vanilla
  • 1 teaspoon grated ginger
  • 1 pear (Bartlett) diced
  • 3 strawberries sliced
  • ¼ cup crushed walnuts

In a saucepan, stir together sugar, orange juice, ginger, and vanilla. Bring to a boil. Turn to simmer for five minutes. Add one diced pear to syrup. Leave on low heat and cover for 3 minutes or until pear is soft. Pour into bowls, garnish with sliced strawberries, and crushed walnuts. You can serve it hot or cold.
