Homemade Hot Cakes with Cinnamon Honey Butter

Celebrate Easter morning with a breakfast of hot homemade Easter Bunny shaped pancakes. Top them with a delicious cinnamon honey butter for an extra special treat.

Easter Bunny Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup buckwheat or whole wheat flour
  • 2 tablespoons sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon orange zest
  • 1 1/2 cups whole milk
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup fresh blueberries
  • 1/2 cup strawberries, tips sliced off
  • 2 bananas

Directions:

  1. In a large bowl, mix together the all-purpose flour, buckwheat or whole wheat flour, sugar, baking powder, baking soda and salt.
  2. In a medium bowl, beat the eggs, melted butter and milk together.
  3. Pour the egg mixture into the bowl of dry ingredients, and stir until batter is incorporated. Do not over-stir.
  4. Butter or grease a heated griddle so pancakes won't stick.
  5. Pour a circle of batter onto the griddle, and carefully spoon more batter upward at the top of the circle to form the ears.
  6. Let pancakes cook until bubbles form on the top, flip them over and continue cooking until done.
  7. Place pancake on a plate and decorate it with two blueberries for the eyes.
  8. Place the tip of a strawberry in the middle of the pancake for a nose.
  9. Slice a banana lengthwise into thin strips, and place three strips on each side of the strawberry to form the whiskers.
  10. Slice two circular rounds off another banana and cut a rectangle out of each one of them.
  11. Place the two rectangular banana slices at the bottom of the pancake to form the teeth.
  12. Serve with cinnamon honey butter and syrup.

Cinnamon Honey Butter

Ingredients:

  • !/2 cup unsalted butter, at room temperature
  • 1/4 teaspoon ground cinnamon
  • 3 1/4 teaspoons honey

Directions:

  1. Place butter, cinnamon and honey in a medium bowl.
  2. Using a hand mixer, beat the ingredients until smooth.

Use about 1 teaspoon of the cinnamon honey butter for each pancake, and spread it over the top of each pancake while the pancakes are still hot. Make sure to have the cinnamon honey butter prepared beforehand and have all the decorating ingredients sliced and ready to go prior to cooking the pancakes on the griddle.

Decorate the pancakes as quickly as possible and serve immediately to ensure that the pancakes do not get cold. Another idea, is to put all the decorating ingredients on the table and have each guest make their own bunny face creation.

There are a variety of other foods that can be used to make bunny faces as well. Thinly sliced bacon strips, canned whipped cream or black cake decorating gel can also be used to make whiskers, and thin apple slices can be cut into rectangular shapes for the teeth as well. This recipe is an opportunity to be creative, and can be custom made for the intended pancake eater.
