Easter and Passover are the holidays that coincide with the welcoming of Spring. For much of the world, this means warmer weather and brighter days. It's a time to shake off the heavy comfort food habits, and try out lighter, more fun and interesting Spring dishes. When it comes to appetizers for this time of year, deviled eggs and spinach dip are always on the table. It's always good to try something new, and ensure that you won't be bringing the same thing as two or three other guests at the party. For Easter, Passover, or any springtime meal, try these delightful appetizers to give some creativity and flavor to your menu.
Kielbasa Cakes Recipe
Kielbasa and sauerkraut can make a delicious dinner entree. Here's a way to enjoy the flavor combination in an appetizer form. It's easy to make and eay to enjoy.
Ingredients
- 1 (1-lb) package sauerkraut (not canned), rinsed and drained well (2 3/4 cups)
- 2 large eggs, lightly beaten
- 1/3 cup all-purpose flour
- 1/2 cup chopped green onions
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 to 3/4 cup vegetable oil
- 1 lb. kielbasa, cut crosswise into 1/2-inch slices
Preparation
- Strain sauerkraut to remove as much moisture as possible. Transfer to a bowl and stir in eggs, flour, onions, salt, and pepper until combined.
- Heat 1/4 inch oil in a frying pan. Place spoonfuls of sauerkraut mixture in oil, and flatten into patties. Cook, turning occasionally, until golden. Transfer cakes to paper towels to drain. Keep cakes warm on a rack set in a shallow baking pan in oven. Fry more cakes in same manner with remaining mixture.
- Brown kielbasa in 350 degree F (180 degree C) oven or toaster oven, approximately 10 minutes. Serve cakes topped with kielbasa.
Egg-shaped Red Pepper Cheeseball Recipe
This dip is delicious for any time of year, but at Easter time, enjoy it egg-shaped to add to the fun of the holiday.
Ingredients
- 11 ounces cream cheese, at room temperature
- 1/2 cup diced roasted red pepper
- 3 slices crisp cooked bacon, diced
- 1 bunch green onions, chopped
- 3 tablespoons sour cream
- 1 fresh mango, diced
Preparation
- Reserve 1 tablespoon each of the peppers and green onions.
- In a medium bowl, stir together the cream cheese, remaining red pepper, bacon, green onions and sour cream.
- Form into an egg shape on serving dish. Refrigerate for at least 3 hours or overnight before serving.
- To serve, place the cheese ball on a serving tray, and top with mangoes. Decorate like an Easter egg with reserved red peppers and green onions.
- Surround with crackers for dipping.
